We have added trial period support for variable subscriptions. Subscriptions add-on version 2.0.27 (just released) and Stripe Payments 2.0.40 (not yet released) is required for this to work.
You can install current testing version of Stripe Payments https://s-plugins.com/testing-version/ and check if it works like you expecting.
