    I created a new product and the top of my product page shows my name and the date the page was created – really not interested in having this there. Where are the appropriate settings to remove this?

    That comes from your theme. Your theme controls what meta details (author, date etc) are shown in a WordPress post or page.

    You theme should have an option to turn those off. You should also be able to hide those using some CSS.
