Is there any way to customize an individual product page?
I would like to hide the post date and author.
Also the “thumbnail” image spans the whole width of the page. Is there any way to force that to display at a smaller size?
The post date and author comes from your theme. Does you theme allow you to customize that on a custom post type post?
The thumbnail width you can customize using CSS tweak. I have added a sample example here:
